We started off the meal with chickpea and rosemary cracker, blue cheese, elderberry jelly and flowers; It was almost too beautiful to eat. The taste was alright even though I am not a big fan of blue cheese.

I don’t usually review breads, but when I do, it has to be special. The beurre noisette (brown) butter was rich, sweet and nutty which went really well with the warm and soft bread.

A very creative dish and there were actually salmon cooked 2 ways on the dish. One was the diced cured salmon and the other was the salmon snow (essentially salmon flavoured frost).

Lake District pork belly and jowl, parsnips, roast cauliflower puree, buckwheat and Jupiter
Pork belly was braised until tender, not the crispy skin type but it was still very good. The crunchy buckwheat and juniper sauce added a very nice texture to the dish. However if you don’t like rich and fatty meat then this dish might not be for you.

The fish was cooked perfectly. However the star here was actually the lobster sauce, very nice, light and nutty.

The cake tasted very similar to a christmas pudding and went nicely with the cinnamon ice cream.

The smoked chocolate has an unusually pleasant fragrance to it. The peanut crumble and brittle gave a nice crunchy texture and the ice cream was delicious.
